Growing: Where It All Begins
Coffee thrives in the "Bean Belt" — a band of tropical regions between the Tropics of Cancer and Capricorn. Altitude, rainfall, soil composition, and temperature all shape the flavor of the final cup. High-altitude farms in Ethiopia, Colombia, and Guatemala produce beans with more acidity and complexity, while lower-altitude regions tend toward heavier, earthier profiles.
Harvesting: Picking at Peak Ripeness
Coffee cherries — the fruit surrounding the bean — must be harvested at exactly the right moment. Selective hand-picking, where only ripe red cherries are chosen, produces the highest quality coffee. Strip harvesting, where all cherries are removed at once regardless of ripeness, is faster but less precise.
Processing: From Cherry to Green Bean
Once harvested, the fruit must be removed from the bean. The three main methods — washed, natural, and honey — each leave a distinct flavor fingerprint. Washed coffees are clean and bright; naturals are fruity and complex; honey-processed fall somewhere in between.
Milling, Export & the Green Coffee Trade
After processing, beans are dried, milled to remove remaining layers, graded, and sorted. They're then bagged in grain-pro or burlap sacks and exported as "green coffee" — unroasted beans that can be stored for months without losing quality.
