Morning Camp Breakfast: Cold Brew Pancakes & Coffee-Rubbed Bacon. You're Welcome.

Most people wake up at camp and make instant coffee and sad eggs.

You're not most people.

This is the camp breakfast that makes your whole site smell incredible at 7 AM — cold brew pancakes with a hint of espresso sweetness, and coffee-rubbed bacon that's smoky, crispy, and completely unreasonable in the best way.

One cast iron pan. Two recipes. Zero excuses to ever eat a plain pancake again.

What You Need

For the Cold Brew Pancakes:

  • 1½ cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp sea salt
  • ¾ cup Brew Buddy Cold Brew concentrate
  • ½ cup whole milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

For the Coffee-Rubbed Bacon:

  • 8 strips thick-cut bacon
  • 1 tbsp Brew Buddy French Roast, finely ground
  • 1 tsp brown sugar
  • ½ tsp smoked paprika
  • ¼ tsp black pepper

The Coffee-Rubbed Bacon

  1. Mix the French Roast, brown sugar, paprika, and pepper together.
  2. Press the rub onto both sides of each bacon strip.
  3. Cook in a cast iron skillet over medium heat, 3–4 minutes per side until crispy.
  4. Rest on a paper towel. Try not to eat it all before the pancakes are done.

The Cold Brew Pancakes

  1. Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl.
  2. In a separate bowl, mix the cold brew concentrate, milk, egg, melted butter, and vanilla.
  3. Pour the wet into the dry. Stir until just combined — lumps are fine, overmixing is not.
  4. Cook on a lightly buttered skillet or griddle over medium heat. Pour ¼ cup per pancake.
  5. Flip when bubbles form on the surface and edges look set, about 2–3 minutes per side.
  6. Stack high. Serve with maple syrup, butter, and the bacon on the side.

The Campfire Version

Same recipes, same cast iron, same fire. Cook the bacon first, set it aside, wipe the pan, and use the residual heat for the pancakes. The bacon fat left in the pan? Use it instead of butter. You'll thank us later.

Why Cold Brew Works in Pancakes

Regular coffee makes pancakes taste like coffee. Cold Brew concentrate makes them taste like something you can't quite place — slightly sweet, slightly rich, with a depth that makes people ask "what's in these?"

That's the move. Brew Buddy Cold Brew is smooth, low-acid, and roasted to order — which means it's doing real work in this batter, not just adding bitterness.

The Brew Buddy Way

Roasted to order. Shipped fresh. Built for people who refuse to settle for a bad breakfast.
