What Is a Coffee Roast Level?

Roast level refers to how long and at what temperature green coffee beans are roasted. The longer the roast, the darker and more caramelized the bean becomes. Roast level dramatically affects flavor, aroma, body, and caffeine perception — though not always in the ways you'd expect.

Light Roast

Light roasts are roasted to an internal temperature of around 356–401°F (180–205°C) and are pulled before the first crack fully completes. They retain the most of the bean's original character — which means the origin flavors shine through.

  • Flavor: Bright, fruity, floral, tea-like, complex
  • Body: Light and delicate
  • Acidity: Higher
  • Caffeine: Slightly more caffeine by volume (denser bean)
  • Best for: Pour over, AeroPress, drip coffee

If you love tasting the nuances of a single-origin Ethiopian or Colombian bean, light roast is your friend.

Medium Roast

Medium roasts hit around 410–428°F (210–220°C), just after the first crack. This is the sweet spot for many coffee drinkers — you get a balance of origin character and roast-developed flavors.

  • Flavor: Balanced, caramel, chocolate, nutty, mild fruit
  • Body: Medium
  • Acidity: Moderate
  • Caffeine: Balanced
  • Best for: Drip, pour over, French press, cold brew

Medium roast is the most popular roast level in the U.S. for good reason — it's approachable, versatile, and crowd-pleasing.

Dark Roast

Dark roasts reach 437–482°F (225–250°C), well into or past the second crack. The roast flavors dominate at this stage — think bold, smoky, and rich.

  • Flavor: Bold, smoky, bittersweet, dark chocolate, low acidity
  • Body: Full and heavy
  • Acidity: Low
  • Caffeine: Slightly less by volume (expanded bean)
  • Best for: Espresso, French press, Moka pot, cold brew

Dark roast is ideal if you love a strong, bold cup or if you're making espresso-based drinks where milk or cream will balance the intensity.
